Homemade Mango-Graham Ice Cream

Summer is officially on! Many of us will definitely look for something to ease the heat of the weather – swimming, iced beverages, cold water, anything cold is hit this season.

Mango-Graham Ice Cream

One of the favorites among cold items is ICE CREAM. I made one over the weekends inspired by one of the newest flavors of Selecta - Mango Graham.

Making one is very simple. Just mix the ingredients for the ice cream base, add the flavor of your choice, put in the freezer, and you're done!

I suggests that this should be prepared at night so the cold is not disturbed by frequent opening of the fridge.

Mango-Graham Ice Cream

Ice cream base:
2 tetra-packs All-purpose cream, chilled
1 cup condensed milk
1 cup evaporated milk
1 tsp salt
1 tsp vanilla

Graham crackers crushed into tiny bits, not powdered
1 cup mango, pureed leaving some bits

1. Prepare the Ice cream based by combining all-purpose cream, condensed milk, salt and vanilla.
2. Mix (using hand mixer with medium speed) until well-blended and thick.
3. Chill in the freezer for about and hour.
4. Take the prepared base out of the freezer, add evaporated milk and mix until evaporated milk has been incorporated.
5. Fold in graham crackers and mango.
6. Place in a container with cover and return into the freezer for at least 4 hours before serving.
